Looking for a delicious way to add more kale to your life? Yes? Then, this Massaged Kale Salad recipe is for you! My kids love it, party guests rave about it…this is my favorite way to eat the nutritional powerhouse, KALE!
Ingredients
Directions: Wash kale thoroughly. Remove kale leaves from stems. Tear kale leaves into small pieces and put into a large bowl. Discard stems, or even better – save for juicing or compost. Next, add to the large bowl; olive oil, lemon juice, sea salt, cayenne and half of the avocado. Now, here’s the fun part! Massage the kale with your hands, mixing in the other ingredients until the kale leaves are slightly wilted and bright green.

- 1 bunch of curly kale
- 1 tblsp. extra virgin olive oil
- 1 tblsp. Bragg’s apple cider vinegar
- 1/2 a lemon – juiced
- 1 ripe avocado
- 1/2 tsp. sea salt
- pinch of cayenne pepper (optional)
- 1/4 c. chopped onion (purple onion looks pretty, but any onion will do)
- 1/2 c. cherry or grape tomatoes cut in half (or any diced tomato)
- 1/4 c. pumpkin or sunflower seeds

Massage the kale with your hands, mixing in the other ingredients until the kale leaves are slightly wilted and bright green.
Now, add the other half of the avocado, chopped onion, tomatoes and pumpkin seeds. Toss gently and serve!
